Lamb and mutton aren't big here. I can't think the last time I even seen any in a store. Probably have to go into the city to the more ethnic neighbourhoods to find it. Sometimes it shows up on a menu of a "fancier" restaurant. We live on beef almost 24/7 but that's because we raise it and buy a half every year. Most of the rest is chicken, again because we raise it, and then pork because it's cheap.
Friends with kids who aren't on the farm mostly live on hamburger and sausages(pork and beef), chicken, and pork because that's the price range they can afford.

What's the price of fats on the rail right now?
Previous years, absolutely the packers were making the main profit with the big spread between fats and store prices, but now? Not so sure, the store prices haven't rocketed along with live cattle.
They seen the writing on the wall and got their prices up when the herd shrunk, and now the herd is so small they have to pay through the nose for animals to slaughter.

We both know the packers have been manipulating the market when they can. The recent market run up is based on lower supply. How much additional profiteering is occurring in the whole chain is an ongoing question.
But don't expect Trump to seriously take on the beef processors and retailers.
As usual it's a lot of talk and misinformation.
