What Nutrients are in the Food you grow?

An interesting article for farmers to read:

    http://eatsblog.dallasnews.com/2013/05/maybe-
    the-paleos-are-right-nyt-piece-details-how-man-
    has-bred-nutrients-out-of-produce.html/

A credible farmer providing nutritional food will
    be a $win-$win. Pars

    Wouldn't a nutrient-testing instrument for grain be
useful? Farmers send in their sample to be tested,
post harvest, to U of S, and with instrument-
invention plus testing costs paid for by the check-
off $$ presently being collected, instead of some
    new variety developed.

The data would be helpful. Compare samplings
with other countries' samplings. Area and farms
    producing best nutrients. Depletion graphs.
Correlation between low nutrients and poor health
    trends. Compare varieties. Compare grains.
    Gusty? lol Pars

I'd be curious what such a test would indicate.

Common sense tells me that a well fed, healthy crop will be nutrient rich. A sickly crop grown on a depleted soil will be nutrient poor.

The total number and quality of various nutrients
        would be particularly interesting. Pars
