    How much risk of nitrate poisoning is there to grazing newly frozen alfalfa if the cattle are used to the alfalfa? If I pull the cows out, how soon can they go back in?

    There is very little chance of Nitrate poisoning from Alfalfa, what you need to be concerned about is Bloat. After the alfalfa has been touched by frost the digestability goes through the roof, causing a faster breakdown and gas formation in the rumen, once the plants dry down the plant is more than likely to be stable and quite safe to be grazed.
